Sausages with Sautéed Onions
and Peppers

Ingredients:

  • 4 pieces sausage, spicy or mild type
  • 1 ¼ tablespoon butter
  • ½ medium-sized yellow onion, sliced
  • ½ red onion, sliced
  • 3 cloves garlic, minced
  • 1 large bell pepper, sliced
  • 1 yellow or green bell pepper, sliced
  • 1 teaspoon basil, dried
  • 1 teaspoon oregano, dried
  • 2 ½ tablespoons white wine

 

Directions:

  • Put the sausage into a large skillet and place it over medium heat. Brown the sausages on all sides then remove them from the skillet when done. Slice the sausages.
  • Melt the butter in the skillet and allow it to heat up. Pu the garlic, onion and oregano, stirring them together for about 2 to 3 minutes. Add the wine. Continue cooking until onions and peppers become tender.
  • Add in the sausages. Turn the heat to low, cover the skillet and allow it to cook for about 10 minutes.

Sausages with Homemade Sauerkraut

Ingredients:

  • 3 pieces sausages, cut into one inch thick slices
  • 1 apple, diced
  • ¾ large onion, chopped
  • ¼ pound bacon
  • 2 2/3 tablespoons brown sugar
  • 1 ¾ teaspoons seeds of caraway
    (optional)
  • 1 1/3 pounds sauerkraut, washed
    and drained

 

Directions:

  • Put and mix together caraway seeds, sauerkraut, diced apple and brown sugar in a saucepan then cook over medium heat. Simmer the mixture. Reduce the heat to low and continue cooking for a couple of hours, stirring the mixture occasionally.
  • Reheat the oven to 365 degrees Fahrenheit or 165 degrees Celsius. Apply grease on your baking dish.
  • Put the onion and bacon into your skillet and cook them over medium heat or until the bacon becomes nearly crispy and the onion starts to brown. This may take about 8 to 10 minutes. When done, add the bacon mixture to the sauerkraut. Using the same skillet, cook and brown the sausage with the remaining bacon grease. Sausage is done when it starts to brown. This may take about 10 minutes. Add in into the sauerkraut mixture. Put the sausage ad sauerkraut mixture into your baking dish. Bake the mixture for about an hour or until the mixture starts to bubble.
  • Perfect when served and eaten with mashed potatoes.

Grilled Sausage on a Bun

Directions:

  • Defrost sausage either in the refrigerator on in cold water.
  • Preheat grill to medium-high temperature.
  • Create halfway-deep cuts (diagonal) into the sausage and in the inner curve every half an inch. This will practically straighten out the sausage for easy cooking and grilling purpose.
  • Make similar perpendicular cuts on the first ones. The result should look like a checker board.
  • Put the sausages on the grill, taking the time to rotate each piece every couple of minutes. You can see that the sausages are done when they turn brown and become crispy.
  • Toast the bun on the grill. This is optional.
  • Serve grilled sausages on buns along with condiments and other add-ons that you prefer.

Spicy Sausage Pasta Alfredo

Ingredients:

  • 3 pieces hot Italian sausages
  • 1 medium-sized sweet bell pepper, diced
  • 1 clove garlic, minced
  • 1 cup mushrooms, sliced
  • ½ cup red wine
  • ½ cup Parmesan cheese
  • 1 pound penne pasta, cooked and drained
  • 1 jar Alfredo sauce

 

Directions:

  •  Saute sausage, mushrooms, pepper and garlic in a large skillet. When sautéing is done, add wine and continue cooking until half of the wine has evaporated. Add sauce and stir in pasta and cheese until thoroughly blended.
  • Serve hot.
